PostSubject: Strawberrty glaze pie   Mon Jun 04, 2012 8:55 am

STRAWBERRY GLAZE PIE

1 pie shell
6 cups fresh medium size strawberries
1 cup water
3/4 cup sugar
3 Tablespoons cornstarch
Red food coloring

Bake and cool pastry. Wash berries; remove hulls. Crush 1 cup of the smaller berries and cook with the water for about 2 minutes. Drain well with sieve (I use an old coffee pot); reserve juice. Add water if needed to make 1 1/4 cups juice. Discard cooked berries. In saucepan, combine sugar and cornstarch; stir in berry juice. Cook and stir over medium heat until thickened and clear. Stir in about 5 drops fed food coloring. Spread a small amount of the glaze mixture (about 1/4 cup) on bottom and sides of baked pastry shell. Arrange half the whole berries, stem end down, in pastry shell. Spoon half remaining glaze carefully over berries, being sure each is well coated. Arrange remaining berries, stem end down, on first layer; spoon on remaining glaze, coating each berry. Chill 3 to 4 hours. Garnish with whipped cream.

This pie soaks through within a day or so so plan to eat before itís soggy!

Sounds delicious. I make one that is very similar but really quick and easy.

It uses Strawberry jello and cornstarch to make the glaze, and omits the food color.

To prepare the glaze dissolve 1 cup sugar, 3 tablespoons strawberry jello, and 3 tablespoons cornstarch in 1 cup of water and cook until thickened. Cool slightly before poring this glaze over a cooked pie crust filled with sliced strawberries and chill. Spread top with whipped cream or Cool Whip before serving.

I also make this with fresh sliced peaches, using peach jello. We had this yesterday.
