HELP!! Already made 2 diffferent recipes of zuke bread, 2 muffin, crustless quiche & now I am on to cake. Have heaps of pickles in pantry so not keen to head down that road.

Can anyone help with some interesting ideas ~ have American recipe for zucchini cobbler, takes 8 cups zuke, makes a big slab of "pie" that is suppose to taste like apple but way too much for just the 2 of us!!

MT I put a load through the food processor and grated them thickly, froze in batches to add to soup come winter to help thicken it, will add them to stews and casseroles. I also cut a lot of my bigger not quite blimp sized ones into 1 1/2" thick slices, blanched for 3mins each in hot then ice water then laid on trays lined with baking paper and froze for a couple of hours. At that stage they are hard enough to life easily and package into zip lock bags without melding together into one huge chunk for use come winter in casseroles, soups etc. im actually planning on using them in vegetable lasagnes, mmmm. I know Golo sautes hers and freezes it to use in winter.

I also made zuchini brownies, to die for recipe, mmmmmm and I found recipes for cookies you can freeze, even zuchini marmalade I plan on trying its got pineapple, ginger etc and sounds yummy, its with cooks.com

Thanks gimpy cat for suggesting the Allrecipes site, I forget about that one. Heaps of different zuke recipes. The brownies sound soooo yummy!! I have some zuke, onion & capsicum salting to make a pickle today.

Yesterday a sweet & savoury muffin, think I like the savoury better [cheese & chive with some red capsicum] the sweet ones needed more than the 1 tsp cinnamon, maybe a 1 tsp mixed spice too. Plus I made that zuke crustless quiche for dinner, 3rd for season, don't think DH wants to see another one of those!

Still have some zukes left, someone on Taste put a link for pioneer woman, she had a different cake with only 2 tblsp oil which sounds nice & healthy until you get to the cream cheese icing! lmao

MT I have quite a few big ones left to use, Im going to grate them up and make more muffins, some wtih a bit of bacon, some without but I add herbs to them all. Im freezing the muffins to use through winter wtih pasta and soups etc, easier than herb or garlic bread and so easy to thaw in microwave and eat. I figure they wont go astray. This is the basic recipe I use, no butter in it

2 cups flour
4 tspn baking pwd
1/2 tsp salt (can leave that out I reckon)
1 cup grated tasty cheese (I use light cheese)
1/4 cup grated parmesan (I dont use it, found it makes them stick)
3/4 cup milk
2 eggs
3 zucchini grated (250g worth)

Seasoning - cracked black pepper, herbs, bacon etc - whatever you fancy, guess you could put olives and sundried tomato etc

* Sift or fork flour, baking pwd and salt in a large bowl. Add seasoning and cheese, stir through. Add the grated zuchini and stir through

* In a jug I whisk eggs and milk togehter then add to dry ingredients and fold until mixed, dont over beat it. Spoon into lightly greased pans and cookd at 210c for abut 15mins or until done.

I doubled the mix and it was so easy to make and they freeze beautifully

Hey Admin Laura!!! Thanks for your version of a savoury zuke muffin!!

Here is the recipe I made for Zuccihini Cheese Chive Muffins

2 cups self raising flour [I used 1/2c WM SR flour as part of it]
1 tblsp sugar
1 1/c cups grated zucchini
125gm grated tasty cheese [about 1 heaped cup cheese]
1/2 a finely diced red capsicum
Fresh chives, chop fine [I used one green onion & some garlic chives]
2 eggs beaten
1 cup buttermilk [no buttermilk in our little town so I made sour milk by putting 1 tblsp vinegar in a cup & filling it to 1 cup with milk & let it sit while I assemble all the other ingr.]

Sift flour & sugar in large bowl. In med. bowl beat egg, add zuke, capsicum, cheese, chives & milk. Mix, add to dry ingr. & only stir to combine.
Makes 12 med. size muffins. Bake 180 for 20 mins.

I planted zucchini seeds a couple of days ago...they are about 1/4" tall right now!! just in case you wanted to know!! ;)

I also grate up my zucchini and freeze them in baggies in the right amount for breads. Then I just have to take out one baggie, thaw in a colander and use.

Ohhh now thats a good idea Karol, I could freeze batches for making those heavenly muffins later in the year, mmmmmm. So glad your babies are up, are they in the ground or are you starting them in a warm place first?

Karol, do you squeeze the excess moisture out of the zucchini before you put it in the bag to freeze. Does it come out very watery when thawed??

I have frozen my zuchinni in bags to use later also.... I let it drain for awhile after thawing...

I have a little greenhouse-cart (I'll take a picture later) for growing my seeds (happy birthday to me....happy birthday to me.... :))

I just grate the zucchini and freeze in 3 C batches (what I need for my recipe). then I place the frozen 'clump' in a colander over the sink and let it thaw. When it's all thawed out, I take a clean towel, wrap up the zucchini and squeeze the heck out of it!

Voila...zucchini for breads!

I found this recipe using zucchini. It is yummy.
4 small zucchini ( I used part of a big one and removed the seed cavity)
3/4 c green pepper
1/2 c green onion
1/3 cup veg oil ( I used 1/4)
1/3 c vinegar(cider is what I used)
1 1/2 t good seasons (dry)Italiam dressing mix( it is in a pouch)
or you could use what they called for dry basil and parsley flakes
1 t garlic powder
Dice veggies. Put in a bowl(no kidding, lol) Mix up dressing ingredients. Pour over veggies and put in frig for a couple hours.
As you can see you can adapt it to suit your own taste. I was thinking ranch dressing mix might taste good.

That sounds good TLC. Gonna have to try it. My favorite lunch is chopped up zucchini, cucumber, red onion, pimento stuffed green olives, canned artichokes, tomato & 1 of those small packets of salmon with 2 or 3 dashes of whatever drsg suits my fancy. YUM & healthy too.

I have a cure for too much zucchini....I'll send you a few of the bunnies that seem to be very fond of my zucchini blossoms.....doubt I will be in need of any of these recipes this year......they are now leaving my petunias alone....too much of a good thing I guess...and the zuccchini blossoms are a welcome change of taste for them....bad bunnies!!!

CC spray the blossoms with some water that you put tabasco sauce into, any kind of hot sauce, can add some oil to make it stick, those bunnies wont be finding them so tasty, I promise you! You can spray buds that are forming too and not yet opened

Zucchini Drop Cookies

1 egg slightly beaten
1 Cup sugar
1 cup grated zucchiini
1/2 cup margarine
Mix
2 Cup flour
1/2 tsp salt
1/2 tsp ground cloves
1 tsp cinnamon
1tsp baking soda
Mix
add
1 cup raisens or dried cranberries
1 cup walnuts
optional... add coconut if you like

Bake 375* for 10 to 12 min (lightly brown) eat and eat and eat... nummy

This is one of our favorites!

Chocolate Zucchini Cake
Ingredients:
1 cup brown sugar (firmly packed) ½ cup sugar ½ cup butter ½ cup vegetable oil
3 eggs 1 teaspoon vanilla ½ cup buttermilk* 2 ½ cups all-purpose flour
½ teaspoon allspice ½ teaspoon cinnamon ½ teaspoon salt 2 teaspoons baking soda
4 tablespoons cocoa 2 ½ cups grated zucchini ½ to 1 cup semi-sweet chocolate morsels
can of chocolate frosting (optional) but morsels are usually enough for some people

Directions:
In a large bowl, cream together the sugars, butter and oil.
Add eggs, vanilla and buttermilk stirring well to mix.
Sift together all the dry ingredients and then sift into mixing bowl
Grate the zucchini, skin and all, into the bowl and stir until blended.
Pour into a greased, floured 13 x 9 inch baking pan.
Sprinkle top with chocolate pieces
Bake in preheated 325 degree oven for 45 minutes or until cake test done.
Thoughts
Cake freezes well. We cut into thirds and wrap two sections in aluminum foil and freeze. I use a can of fudge chocolate frosting (the chocolate chips just aren’t enough) and divide it into thirds also. Place two of the thirds into separate snack bags and freeze with the cake. Spread the remaining third on the cake or just eat it from the can.
*We have also found that the Powdered buttermilk mix found in the baking section of the grocery store works well. Just follow the directions on the container mixing the dry powder with the dry ingredients. One can will last the entire growing season.

mmm....getting hungry!!
Ive never seen the buttermilk powder, I will look for it.

I make fake buttermilk using one scant Tablespoon of white vinegar then add enough milk to make 1/2 cup buttermil, stir and let set a few minutes until curdled...I have been using this method for 30 years in a banana nut bread recipe I make. It always comes out wondefully moist
I never buy buttermilk, because I don't drink it (oh shiver) Mom does though...gaaaak

5 C peeled seeded and sliced zucchini
1/2 c water
1/2 c sugar
1/4 c lemon
1 Tablespoon cinnamen
Combine and boil for 10 min
Pour into a 9 x 9 greased pan

6 Tablespoons butter
1 C flour
1 C sugar
1 teaspoon baking powder
1/2 tsp salt

Top mixture
Bake for 45 min @ 350*

Taste just like apple crisp... delicious chef2 cooking hongry

Mix together:
3 eggs
1 1/2 cups sugar
2 cups grated zuchinni
1, 20 oz can crushed pineapple, well drained - save juice
Then add:
1/4 cup vegetable oil
1/2 cup of the saved pineapple juice
2 teaspoons vanilla
Stir in:
2 1/2 cups flour (I use 1 cup whole wheat & 1 1/2 white)
2 teaspoons baking soda
1 teaspoon baking powder
pinch of salt
1 Tablespoon cinnamon

Spray 9x12 cake pan. Bake at 350 for 40-50 minutes.
Cream cheese fosting when cool.[i]
