PostSubject: Cream Sauce or Gravy   Wed Apr 28, 2010 1:29 pm

I was just thinking ...(do it once in awhile) when I make a cream sauce I start out by heating my milk, add my butter, seasons and then thickening agent (which is usually flour mixed with water till smooth) I cook and stir till thickened... now when I make gravy .... I start out with shortening then add flour and brown it a bit add milk and seasons... Isn't it interesting same incredients... different consistency and taste... does anyone do it differently????

I make cream sauce the way you make gravy. Turkey gravy is different. I put flour and water in a shaker and add to the broth and cook till it thickens. Other types of gravy are the same as cream sauce.

I call that white sauce? Does anyone else? Anyhow - I make mine in the microwave, too. Like TMM said, it's much easier. I use my 4 cup glass measuring cup - melt the butter, stir in the flour, stir in the milk - then cook at 70% for a couple of minutes - stir - cook - stir - cook - until it's thickened. Doesn't burn or stick to the pan or require constant stirring.

Gravy? Go to grocery store. Buy a jar of gravy. Dump into a bowl. Heat in microwave. Serve. Embarassed

It's funny, it seems I learned to make gravy because I love it so much. My MIL and one SIL have gravy phobias so I make the gravy for Thanksgiving when SIL has it. If you want some, you will learn!

QB lmao I must admit.... Embarassed I do gravy your way at least 1/2 the time I do it...or use the packet stuff. Usually just use what's left in the crock pot after the roast is done...I do that roast where you dump cream of watever soup along with beefy onion dry soup on top when you cook it...gravy in the bottom..like magic! Cheesy

I call it white sauce too...must be a Southern thing ya'll!

I'm glad to know there are other gravy-phobics out there. I was kind of embarrassed after admitting it here! Embarassed

TxM - oh, yes! I do lots of meat recipes that make their own sauces/gravies. I always have cream-of-whatever soup on hand! That and stewed tomatoes are the two items I'm sure I couldn't cook without!!

I make my gravy and white sauce in the same way, I do a basic roux version, melt butter or use the fat, just a little and stir flour in then gradually add back in the juices or stock. If Im making a sauce for say lasagne I warm the milk and add bay leaves, peppercorns etc and leave it to infuse for a while but then I pour it into a jug and melt some butter in the pan then add the flour and the milk back in. I also keep a box of gravox powder in the cupboard for emergency use. Oh and if I cook extra roast veges to make into soup I will add any left over gravy to the pot too.

Gimpy, I do it that way too. My Dad taught me how to make gravy, cream (white) sauce and pie crusts when I was about 8. Since I don't like to eat pie crusts, I don't do those anymore, but DH loves my gravies. The dogs are more than willing to take any that is left over. In fact, they will even eat leftover plain boiled potatoes!!

All of the above. Then there is roux for gumbo. Slowly heat flour and oil in iron frying pan till it is almost black but not burned. Throw in double handful of chopped green onions and stir like crazy as kitchen fills will mouthwatering steam, add to pot of gumbo for final thickening. Scuse me, I've got to go consult with little brother about dinner tonight. Very Happy
