Recipe as appears in signature pic! azn

Jen's Nut Caramel Slice

Base:
1 cup self raising flour
1 cup plain flour
2 tbsp cocoa
150gm butter, melted [5.28 oz. approx]
3/4 cup caster sugar [extra fine]
1/2 cup desicated coconut [fine]**
Mix & press into base of 13"x 9" slab pan [extra lrg. lamington tin] Bake in mod oven 180c or 350f for 10 min. Remove, set aside. reduce oven to 140c or 300F??? very slow oven.
Topping:
2 tins sweetened condensed milk [14 oz. ea.]
2 tblsp butter
2 tblsp golden syrup [dark Karo syrup]
3 1/2 cups walnuts
Combine sw. cond. milk, butter & golden syrup in med. bowl or large jug, mix well, stir in nuts to coat. Pour over cooked base & bake 140c for 1 hr.
Topping: [optional]
200gm dark chocolate [not quite 1/2 lb]
1/2 cup cream
Warm cream in saucepan, add chocolate to melt, stir well & pour over cooked & cooled slice.
**In Australia desicated coconut is a very fine coconut, if I run out I take shredded coconut & whizz in a food processor. Takes about 1 cup shredded to make 1/2 cup desicated coconut.


History of recipe: Jen was someone I struck up a friendship with that opened a little cafe on our river foreshore. She did burgers & fries, egg & bacon rolls, a few slices [bars] & cakes but mainly was an ice cream shop.
We met her & her husband for a beer & dinner & I often had a coffee in her shop. One Sun. we met for dinner just before she was going to close up shop - she hated it from the beginning, she had gone from secretarial office work to running her own busines & couldn't cope with all the standing required in the business & she couldn't find a buyer fast enough.
Next day I saw her for a minutes as they were packing things in the shop. 2 days later her husband showed up at my door asking where his wife was - while he was away at a job interview she had got a removalist in & emptied their house of all her furniture & belongings & poof gone!! Hence my referring to her as Jenny the Bolter!

Lynnie's Apricot Slice [bars]

Base:
1 1/4 cup self raising flour
1 1/4 cup desiccated coconut [fine]
1/4 cup sugar
125gm butter, melted [1/2 cup]
2 tblsp golden syrup [dark corn syrup]
Put dry ingr. in bowl, melt butter with golden syrup, add to dry ingr., mix well, press into large lamington tray [13x 9" ??] Bake 180c [350F] for 14 min. Cool
Topping:
2 cups dried apricots, dice coarsely
Cover apricots with hot water, set aside for 30min., drain well.
1 tin sweetened cond. milk
2 cups shredded coconut
1 cup desiccated coconut
Combine & mix well [add extra desiccated coconut if too moist] Press on top of baked base. Press well with fork. Refridgerate.
**Desiccated coconut is a superfine coconut. 2 cups shredded coconut whizzed in a food process = 1 cup desiccated coconut.

Ray loves apricots. I was going to copy your recipe. But I have it. Only mine calls for a can of crushed pineapple. Now I know I can change that to the apricots.

Hummingbird Cake

250gm self raising flour [1 2/3 cups]
1/2 tsp cinnamon
1/2 tsp ground coriander
1 tsp baking soda
200gm brown sugar packed [1 cup] 50/50 light & dark br. sugar
1/2 cup desiccated coconut = 1 cup shredded in food processor fine
1 1lb tin crushed pineapple well drained
2 ripe bananas, mashed
1/2 cup chopped walnuts or pecans
2 eggs lightly beaten
3/4 cup sunflower oil

Grease & line a 9" round or sq. cake tin. Sift flour, baking soda & spices into a large bowl. Add sugar, pineapple, coconut, banana, nuts eggs & oil. Stir to combine. Spread in tin bake 40 min. or until skewer comes out clean. Place on rack, set aside to cool.
OMG gimpy cat, I forgot oven temp & baking time, slow oven [160c] 325F, 50min to hr. I sort of combined 2 recipes one had cooking time 40 min. one had 1 hr 25 min. same size baking tin, go figure!

Cream Cheese Frosting

1/2 lb. cream cheese, soft
1/3 cup butter
3 cups powdered sugar
1 tsp vanilla
2 tsp milk
**optional 2 tblsp coconut powder
Beat well cream cheese, butter & vanilla. Combine remaining ingr., beat till smooth, enough to do top & sides of cake. Top cake with toasted shredded coconut.

Apricot Coconut Slice

1 1/4 cups self raising plain flour
1 1/4 cups desiccated coconut**
1/4 cup sugar
125gms butter, melt [1/4lb plus tblsp]
2 tblsp golden syrup [dark corn syrup]
Combine dry ingr. in bowl, melt butter with golden syrup. Add to dry ingr. mix, press in 13" x 9" cake tin or 23cm x 33cm lamington tray.
Bake 180c [350f] for approx. 14 min. remove
Topping:
2 cups chopped dried apricot, put is small bowl, cover with hot water, set aside for 30 min. then drain well.
In large bowl combine soaked dry apricot with
1 tin sweetened condensed milk
2 cups shredded coconut **
1 cup desiccated coconut**
Mix well, spread over cooked base with fork. Keep refridgerated.

**desiccated coconut is superfine, if you can't find it 2 cups shredded coconut in food processor makes 1 cup desiccated.

**Shredded coconut, I find generic brand works best, not the moist name brands.

Pumpkin Bars

2 C sugar
1 C oil
4 eggs
2 C pumpkin ( I usually use canned pumpkin, but I have microwaved a real pumpkin and used the pulp)

Mix

1 tsp soda
2C flour
2 tsp baking powder
1/2 tsp cinnamen

Sift and add.... Mix

optional... nuts

350* 30 minutes grease 15" x 10" x 1" pan ( cookie sheet with sides)

Cream Frosting for Pumpkin Bars

4 oz cream cheese softened
1/4c butter softened
2 C powdered sugar
1/2 tsp vanilla

Blend together well and spread on cooled bars

PostSubject: Bisquick Impossible Pies/Muffins   Mon Mar 05, 2012 10:57 pm

Baking Mixture

1/2 c milk
1/2 c Bisquick/or gluten free
2 eggs
Mix together

Burger Mixture

1 lb gr beef
1 lg onion (1Cup) chopped
1 T Worcestershire sauce
1 tsp garlic salt
1 C shredded Cheddar cheese

or Chicken ' n Brocoli

chopped broccili (frozen/thawed) large cup full
1 1/2 c cheddar cheese
1/2 c chopped onion
salt and pepper
Mix together

Put 1 T of Bisquick mixture in well greased muffin pan
1/4 c of meat mixture
1 T of Bisquick mixture on top

Bake 35 min 375* oven

I would try this with bacon and boccoli also... freezes well ... microwave 50 sec. to rewarm...
