OK, I printed out apple soggy and kick ass apple pie. Tomorrow's grocery day, as well as all crazy people to go the grocery store day and free sample day. I haven't decided yet which I want to try first, but I think I either need to get a pastry blender or find a youtube video on how to cut in butter. I think I'd do better with a visual demonstration.

ETA: Just did a search, and someone said you can cut in butter using a few pulses of a food processer. Sounds like a few seconds with my hand mixer would do it too!

Apple Cake with Hot Caramel Sauce

1/2 cup chopped pecans
2 1/2 cups finely chopped apples, such as Granny Smith
1/2 cup butter, softened
1 cup sugar
1 egg
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla
1 cup flour


Hot Caramel Sauce
1/2 cup butter
1 cup brown sugar
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup evaporated milk

In large bowl cream the butter. Add sugar and beat till fluffy. Add the egg and beat till well blended. Mix in soda, salt, cinnamon, and nutmeg. Add flour and stir just till blended. Stir in apples and nuts. Pour into a greased 9" round cake pan and bake in preheated 350 degree oven until the top springs back when lightly touched with your finger. Serve with Hot Caramel Sauce. TO MAKE SAUCE: In a saucepan, melt the butter, brown sugar and salt. Bring to a boil. Remove from heat and whisk in vanilla and milk. Serve warm sauce over cake. Serves 8.

This is my favorite apple cake. I think mostly because I LOVE the sauce!

I'm tempted to try that hot carmel sauce by itself! I think I just need the milk.

I went ahead and made my apple soggy today because it seemed a little easier to me. Aside from the fact that I now have a HUGE mess in my kitchen and for some reason it takes me over an hour to wash, peel, and slice 6 apples, it came out very well. Oh, and it took me so long that by the time I was done with that, I was completely out of the mood to go and make this one casserole I got the recipe for from teh newspaper's coupon section. But, my apple soggy is done and it's very good!

This was a big hit today...it is a real moist cake and the sauce......................to die for....

Individual apples 'pies' that look beautiful on the plate.

Ingredients:
5 Granny Smith
1 tsp cinnamon
1/4 cup sugar
1 Tbsp brown sugar
Pie crust pastry

Directions:
Cut tops off 4 of the apples (discard). Using a melon baller, carefully scoop out the insides of the 4 apples - don't puncture sides.

Peel the last apple and thinly slice, along with scoop out insides from the 4 apples. Place in a bowl and toss with sugar and cinnamon (add more or less to taste). Then fill the hollowed-out apples with the cut up apples.

Roll out pie crust and slice into 1/4 inch strips. Arrange on counter into a lattice pattern, then carefully lift onto apple and press gently around the egdes. Use a knife to trim off excess pastry. Once all apples are covered, place in an 8x8 pan and add just enough water to cover bottom of pan.

If want crust to have a shiny appearance, brush pastry with an egg wash (1 egg lightly beaten + 1 Tbsp water). Cover with foil and bake at 375F for 20-25 minutes. Then remove foil and bake for another 20 minutes or until crust is golden brown.
