Banana Cookie

3 Ripe bananas... mash (the riper, the sweeter)
2 c rolled oats... stir in rest of incredients
1 c dates ( I used cranberries )
1/3 c veg. oil ( I used canola)
1 tsp vanilla extract
nuts (optional) ( I like the crunch)

let sit for 15 minutes...

Bake 350* till brown (16 Min) check your cookies Makes 36

other options are to use applesauce instead of the oil
add cinnamen and nutmeg

I sprinkled a little Nutra Sweet on top after cooking (1 packet for 36 cookies)

This is a recipe you can play with ... add what you like...

I made these a few weeks ago and promised to send the recipe to a friend. I figured since I finally got around to typing it up, I'd post it for everybody. This actually came off one of the Snow Sweet Shoppe block patterns.

S’MORES COOKIES

¾ cup butter – softened
½ cup packed brown sugar
1 teaspoon vanilla extract
1 cup graham cracker crumbs
½ teaspoon baking soda
1 ½ cups semi-sweet chocolate chips
1 cup (more or less) tiny marshmallows
½ cup white sugar
1 egg
1 ¼ cups all-purpose flour
½ teaspoon salt

Preheat oven to 350.

Beat together butter and sugars until light and fluffy. Blend in egg and vanilla. Add flour, graham cracker crumbs, baking soda and salt. Mix well. Stir in chocolate chips.

Drop dough by heaping tablespoonfuls onto greased cookie sheets about 3 inches apart.

Bake for 8 minutes. Remove and quickly press marshmallows into the cookies. Return to oven and bake 2 to 3 more minutes or until the marshmallows are golden. Enjoy!!

Whoopie Pie

18 ServingsPrep: 15 min. Bake: 5 min./batch + cooling
Ingredients

* 1 cup butter, softened
* 1-1/2 cups sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 4 cups all-purpose flour
* 3/4 cup baking cocoa
* 2 teaspoons baking soda
* 1/2 teaspoon salt
* 1 cup water
* 1 cup buttermilk
*

FILLING:
* 2 cups confectioners' sugar
* 2 cups marshmallow creme
* 1/2 cup butter, softened
* 2 teaspoons vanilla extract

Directions

* In a large bowl, cream butter and sugar until light and fluffy. Add
* eggs and vanilla; mix well. Combine the flour, cocoa, baking soda
* and salt; add to creamed mixture alternately with water and
* buttermilk, beating well after each addition.
*
* Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake
* at 375° for 5-7 minutes or until set. Remove to wire racks to
* cool completely.
*
* In a small bowl, beat filling ingredients until fluffy. Spread on the
* bottoms of half of the cookies; top with remaining cookies. Yield:
* 1-1/2 dozen.

Oatmeal White Chocolate Chip Cookies with either Cranberry or Blueberries


2/3 cup butter (Unsalted)


2/3 cup brown sugar


2 large eggs


1 1/2 cups old fashioned oats


1 1/2 cups flour


1 teaspoon baking soda


1/2 tesspoon salt


1 1/4 cups Craisins (Either Cranberry or Blueberry)


2/3 cup white chocolate chips

Preheat oven to 375*. Using an electric mixer, beat butter, sugar together in a med. mixing bowl until light and fluffy. Add eggs, mixing well. Comgine oats, flour, baking soda, and salt in a separate bowl. Add to butter mixture in several additions mixing well after each addition. Stir in either the cranberries or blueberries and the white chocolate chips. Drop by rounded teaspoonfuls onto ungreassed cookie sheets. Bake for 10-12 minutes or until golen brown. Cool on wire rack. Makes apporx.2 1/2 dozen. They are super simple to make.....
