Marine Mom, here is my recipe for Old Fashioned Tomato Preserves. We use it as a jam on toast.
6 medium sized firm ripe tomatoes peeled
1 package(about 2 ounces) powdered fruit pectin
4 1/2 cups sugar
1 lemon, quartered and sliced thin

1. Place tomatoes in a large saucepan, no water, and heat to boiling, simmer 10 minutes.
2.
Measure tomatoes, then return 3 cupfuls to pan, stir in pectin. Heat
quickly, stirring sever times, to boiling. Stir in sugar and lemon;
heat again, stirring constantly, to boiling. Cook 1 minute.
3. Ladle into hot sterilized jars, seal, foollowing manufacturer's directions. Cool, and label. Store in cool, dry space.

I have made this often in the fall and it tastes very good. jessie s

Tomato Basil Pasta

1 bunch spring onions/scallions - sliced
10 tomatoes, nice and ripe - diced
Bunch of basil, at least a good handful of leaves - chopped
Fettucini or pasta of choice, gnocchi is great too
Butter (not oil or margarine, real butter)
Rock Salt and Ground Black Pepper to taste
Grated cheese

Saute spring onions in butter till softened, add diced tomatoes and simmer until tomato softens & breaks down, at least 15mins simmering. If your tomatoes arent very juicy and the sauce is drying up too much you can add some chicken stock or water to it. Add the basil and stir through, simmer another 5mins, season to taste and serve over pasta, sprinkle with grated cheese .

A great recipe made with fresh ripe tomatoes and basil from the garden. I also sometimes change it up and just use copius amounts of fresh flat leaf parsley instead of basil. Squeeze a lemon over it and let it stew for a few minutes....hmm...now i must go make a snack...nummy num

Yackandandah Wendy's Tomato Sauce/Ketchup

10lbs tomatoes
3 cups vinegar (I use cider vinegar)
3 1/2cups sugar
5 tablespoons salt
1 tspn cloves
3/4 tspn cayenne pepper
garlic cloves (I use 6-8 nice sized ones)

Peel tomatoes, chop and place in a deep pot with all other ingredients. Boil for about an hour then put sauce through food processor or use a stick blender to make it nice and smooth. If you dont like seeds then use on of those mouli puree things.

I have a mouli, its a great tool. No need to peel those tomatoes that way. I'll be sure to keep this recipe. I don't have the soil to grow large quantities but do buy bushels in season from a local farm.

Id love to try a mouli, Im jsut wondering how much you can put through them at a time is it only small amounts or do they take a fair quantity?

I'd say maybe a four cup capacity, but you need it to empty so you can dump the peel. I've made scads of applesauce with mine.

My sisters husband hooks up a drill bit in the spot where the handle goes and it becomse somewhat automatic. I don't have help so I just crank away. no peeling necessary.

I put it into recycled bottles, make sure the bottles are clean if you have a dishwasher run them through that and that the lids seal well. Do it when the sauce is hot. Stores beautifully, We had a batch last two years. I dont water bath it once its sealed in the bottles, the lids usually suck in and you know its sealed, any Im suspicious on I use that cellophane stuff first then put the lid on gently

Mary, you can buy them, my mom did with out any trouble complete with the lids . One thing she didn't do though was let it cook down enough and it was too thin. Norma

I've never seen them either but she sure did and they looked like long necked soda bottles like we used to have and had a snap ln lid that sealed like the old type caps on sodas too. Some place like a Farm and Home Suooly would probably have them. Norma
