 Soup for one

I came across this recipe in a book of mums and thought it was a great one to share


Gently cook a crushed clove of garlic and a chopped bacon rasher in a little olive oil. Add a handful of diced cook potato and about a cup of chicken stock, bring to the boil then lower heat and simmer for 5mins. Add a handful of finely shredded cabbage or other greens, collards, spinach etc, cook 2mins, season with S&P. Pour into a bowl, add a splash of olive oil and enjoy.

How simple is that?

I thought it might be a good on you and hubby, you could easily change it up by adding precooked carrot etc, some parsley or other herbs. Its a chef's recipe, she makes it on nights when she comes home from work tired out

even if you froze some portions of cooked potato, carrot etc whenever you were cooking it for another meal then you could pull it out and whip up a little batch of soup
