Odd name, I know but DS named them this many years ago and it stuck.

Ingredients:

1/4 cup canola oil
1 egg white

4 potatoes (I use russets) peeled cut into pieces that will fit through the whole in your blender lid).  Cover with cold water til ready to use.  Optional, add 1/4 teaspoon of salt to the water.

1 large onion, peeled and cut into about 8 wedges.
Black ground pepper (2 turns)
1/2 teaspoon baking powder
1/2 cup flour

Preheat the oven to 400*
Grease a Texas muffin pan (6) or a regular pan (12).

Put oil and egg white into blender.
Put on the lid.
Start the blender and while it is running, add potato pieces and onion pieces alternately.  If necessary add a LITTLE bit of the potato water.
After it's all blended, stir in the pepper, flour and baking powder.

Pour into the greased muffin cups and bake at 400 for about 35 min or until browned.

Thanks for posting this, MM! I like potato pancakes, but don't like the frying part. These sound so yummy!! And I like that they have a fun name.

If its a carb....it will be a winner in this house!
I bet these would cook up nicely in my new popover pan DD got me for xmas.
We are having chili for dinner...these might go nicely...I may make some tonight!

By the time I got off the computer and looked at the clock :affraid:
I had just enough time to ladle out the chili and throw together some quick pita grilled cheese sammys. Time does fly online does it not! I'm going to try these though. I hope they work in a food processor since I got rid of my blender years ago.

Golo's Calico Beans

This recipe called for kidney beans, baked beans and butter beans ( I used lima beans because I didn't have butter beans) you add 2 tsp vinegar, 3/4 c brown sugar, 1/2 c ketchup, and 1 T dry mustard.... you brown 1 lb hamburger, 1/2 diced onion and 4 oz bacon (pour off grease) and combine with beans... bake for 45 mins in oven... It is probably called calico because of all the different incredients... DH loved it...

Yellow Squash Patties
good way to use up some of those yellow squash or zuccinnis

4 med yellow squash shredded 1 or 2 eggs lightly beaten
1/2 onion chopped 1/2 c shredded Cheddar cheese
2 1/4 tsp salt pepper to taste
1/2 c flour 1 1/2 tsp veg oil
1/4 c cornmeal

Place squash and onion in a colander, sprinle with salt and drain about 30 min. until no longer moist.
In a bowl mix the squash and onion, flour, cornmeal, egg and cheese... season with pepper
Heat the oil in a skillet ovr medium heat... Make patties and fry crispy brown on both sides...

Both DH and FIL really liked this... so did I....

I'm going to send this recipe to my DD, she joined a produce co-op at the college and has been inundated with squash. It sounds good....I' think i'll give it a try too.

Those do sound good. Wonder if I can stick my frozen slices in food processor and shred them? Probably end up minced. Undesided

I never eat squash, but this I may have to try. I'm trying to eat healthier and it's sounds good!I'll let you know how it goes!

We were so sick of zuccinni about 2 weeks ago, DH pulled out the plants. I picked 2 pails of tomatoes 2 nights ago and tonight I see about double that.

Our tomatoes are done. The plants dried up and the last few tomatoes on the vine spoiled. Never had that happen before! It was so nice having those fresh tomatoes. cry2
Our zucchini didn't do very well again this year. We only got one..then the plant started to die. Same thing happened last year and we suspected squash vine borer. I'm not going to plant any next year! angry

Our tomato plants are drying up, but there are about 3 or maybe 4 pails of tomatoes out there. They are just ripe or close enough that I can pick them. We have brussell sprout plants that look like trees. The don't need to be picked for a while yet. Those will be frozen.

this is the first year for the garden. DH put in a raised garden using retaining wall blocks. Brussell sprouts tonight. They were really good. also made spaghetti sauce from tomatoes. It was the first time I made sauce from tomatoes rather than buying cans, etc. 5 quarts total.

Those yellow squash are delicous sauteed up with zuchinni, onion, garlic, bell pepper, s&P and then add tomatoes and let it simmer till all soft. Toss in some fresh chopped basil and serve over pasta, mmmmmmmmmmmmmmmm

yes gimpy...very similar to how I make mine, I often add fresh polish or sweet italian sausage.
I like to use herbs de' provence which is a mixture of savory, fennel, basil, thyme, and lavender.

Mmm you added lavender? I had a dutch friend and she loved butter cookies with lavender in them and lavender infused honey is nice. I made apple jelly once and put lavender flower stalk into it, my friend said it was to die for, the flavour was delicous. Did you use the leaves or flowers?

you can buy lavender fudge here too, its white fudge with lavender flowers in it, its yummy. I like the flavour of lavender. Right now I have a casserole pot full of water and lavender oil sitting on the fire top, its heated and is steaming gently, smells yummy

German Grandmothers Recipe

2 C Flour
2 C Mashed Potatoes (instant work great)
2 T melted shortening
dash of salt

put in boiling water and when they rise to the top they are done. I don't make them too big... maybe small potato size...

10 to 20 minutes at the most...

Serve hot with ketchup... nummy num around 9/10 dumplings
